Wholesome Sausage Casserole

Ingredients:

*One tin of tomatoes

*One large/Two small Sweet potatoes

*Two Red Onions

*Two Cloves of Garlic

*Half a Packet of Good Quality Brittish Sausages

*Half a Chilli

*Two Fresh Tomatoes

*Paprika

*Salt & Pepper

*A Splash of Balsamic Vinegar

*Olive Oil

*Chicken/Vegetable Stock

*Rosemary

For the Garnish

*One Ripe Avacado

*A Handfull of Rocket *A Couple of Florrets of Broccoli

Start by preparing all your veg. Chop your Sweet Potato, Onion, Tomatoes and Garlic. Set them to one side. Next, put your oven on to 180 degrees and place your sausages in a lined tray (to save on washing up!). Then, set your sweet potato off in a pan of boiling water and cook until tender but not completely cooked. In a frying pan, heat a glugg of olive oil and fry off your onions and garlic. Next add the spices, a little fresh chilli, the rosemary and your softened sweet potato. Once the veg has a good covering of spices, add your chopped tomatoes and a splash of balsamic. Next , add the tin of tomatoes. Before throwing the tin away, put a spoon of stock into the tin and swill around with boiling water to catch all the last remnants of tomato.

Once your sausages are pretty much there (Not over cooked otherwise they will be chewy), take them out of the oven and chop them into the casserole.

Let the casserole simmer for another ten to fifteen minutes until all the flavours have developed. Have a taste and season if needed.

For the garnish, chop your avacado and sprinkle on top with your rocket. Serve with broccoli if you want some extra green goodness!
