Tomato, Chilli and Red Pepper Soup

This recipe is great because if you want a soup in a hurry it can be on your table in about ten minutes (If you're fast at chopping!). You're also going to need a hand held blender for this one to work... With the soup containing chilli, you are kickstarting your metabolism again. And, with there being little other than a whole host of low calorie veg, you are getting a meal that might be low in calorie, but it is high in nutrients, vitamins and minerals that your body needs!

Ingredients
*One tin of tomatoes
*One vegetable stock cube/teaspoon of stock powder
*A handful of cherry tomatoes
*One onion
*Half a red chilli
*One clove of garlic
*Half a large red pepper
*Half a tin of cannellini beans
*Two Large handfuls of spinach
*Two dessert spoons of greek yoghurt
*Teaspoon of paprika
*Salt & Pepper
*Olive oil
Method
Start by chopping your onion and adding to a hot pan with a splash of olive oil, once semi transluscent, add one crushed clove of garlic. Next add finely sliced chilli.
Then, add your cherry tomatoes, chopped in half, and your pepper chopped into small pieces.
Once all the veg is frying away, pour in your tin of chopped tomatoes. Keep the tin and refill it with boiling water and your stock. Pour the stock into the soup and allow to simmer for a few minutes.
At this point add your salt and pepper, paprika and if you have it, a squeeze of tomato puree.
Now you need to blend your soup. Take it off the heat and add the greek yoghurt before blending. Once blended to a soupy consistency, add the spinach and the beans. Part blend this by pulsing the blender until you have a nice mix of whole spinach leaves and partly chopped leaves. This should leave you with a creamy but spicy tomato flavoured soup with a twist!
