Thai style butternut squash soup and chargrilled chicken...

One of my favourite winter warmer recipes. You can't go wrong with a chicken noodle soup but this one is just that little bit special. Totally delicious and totally simple. You will have a meal on the table in no time with this recipe.

Ingredients

For the chicken:

*2 chicken breasts

*1 teaspoon of five spice

*Crushed cashew nuts/peanuts

*Fresh Chilli

*Fresh Corriander

For the soup:

*Chicken stock cube

*Butternut squash (Neck only)

*2 cloves of garlic

*an inch of ginger

*1 red chilli

*1tsp of turmeric

*a bunch of spring onion

*fresh coriander

*1tsp sesame oil

*1tbsp of soya sauce

*300g egg/rice noodles

*half a broccoli

*1 400g tin of coconut milk

*Juice of 2 limes

How to make the tastiest chicken soup ever:

Place the chicken between two sheets of baking paper, drizzle with oil and seasoning. Then, flatten with a rolling pin

Next, blend the squash in an electric blender and cook in the chicken stock.

Now, blend the other ingredients to make paste and add to the stock and squash mixture.

Once you have done this, add the coconut milk and fresh coriander.

The next step is to griddle your seasoned chicken in sesame oil. Once cooked, season with the chilli, nuts and fresh corriander and set aside to serve on top of the soup.

Finally, add your egg/rice noodles to the soup and allow to cook. Once softened, served topped with your chicken for a deliciously healthy and nutritious meal.
