Refreshing Millet Salad

Some of you may have never cooked millet before, and I have to say, the first time I did this I had no idea what I was doing. But, it came out well and I have since experimented with both sweet and savoury recipes using this healthy wholegrain. This salad is a winner for any buffet meal, or, as a light lunch with some rocket and salad leaves.

Ingredients

*One cup of millet

*A few sprigs of fresh mint

*Half a pomegranate (Just seeds)

*Half a cucumber

Method

Start with one cup of millet. Toast this in your pan untill you start to get a nutty aroma. You don’t need to rinse your millet (like other grains such as quinoa), before cooking. Next, add two cups of boiling water and half a stock cube to the pan. Don’t worry about it sputtering, this is normal as the pan is hot. Allow to cook until the millet has absorbed all the water and is light and fluffy. Don’t be tempted to stir too much otherwise you will end up with a mushy consistency (a great alternative for porridge, but not so great as a salad). Set your millet aside and prep the rest of your ingredients to add to the millet once cooled. When cool, run through the millet with a fork and drizzle a little olive oil over the salad. Season with salt and pepper and serve.
