Spelt Dough Pizzas

So spelt might be a new concept to some of you... Spelt flour is an ancient grain, naturally lower in gluten than regular wheat flour, and makes for a great alternative to regular pizza dough. It's not only tastier but it's also healthier than a white bread flour due to it being a whole grain. I have to say, I am not a huge pizza eater but this recipe is always a winner when you have a group of friends round or even just a night in infront of the TV.

Ingredients

For the dough

*455g Spelt flour *250ml warm water *1.5 tbsp dried yeast *3 gluggs olive oil

*half tsp salt

Start by sifting your flour into a large mixing bowl. In a separate bowl, dissolve the yeast into the water. Gradually, add the yeast mixture into the spelt flour and season with the oil and salt. Once you have a doughy consistency, knead for around five minutes. Dust a little spelt flour onto the dough and cover with a damp tea-towel for one to two hours until the dough has doubled in size.

Next, roll out the dough and spread onto a baking tray lined with greaseproof paper. Top your pizza dough with a homemade tomato sauce (Simply fry a red onion and a clove of garlic, add a tin of tomatoes, tomato puree, herbs, salt and pepper and leave to simmer and thicken). Then, lightly on the cheese, add chopped peppers, mushrooms, onions, chicken, or whatever you fancy! Cook in the oven (180deg.) for thirty minutes.
