Beetroot Dip

I do love a good dip but i've got to say i've been feeling all 'hummus-ed' out recently. So, here I present to you, an exciting new dip recipe to try at home. You simply need a few carrots, crackers or crisps to dip into this delightful alternative to hummus. Not only is beetroot absolutely delicious but it has many health benefits and a never ending list of all the goodness your body needs. What more can you want from a snack!?

Ingredients:

*Three rounds of pre-cooked beetroot

*Two cloves of garlic (one if you don’t want garlic breath!)

*Two large spoons of greek yoghurt or crème fresh

*Two handfuls of cashew nuts

*A small amount of ginger

*A teaspoon of honey

*Salt and Pepper to season

*Juice of half a lime

Whizz all the ingredients in a blender until you get a beautiful rich pink hummus textured dip.

*Lowers blood pressure

*Increases stamina

*Improves blood flow

*Contains potassium, magnesium, iron, vitamins A, B6 & C, folic acid, proteins, carbs, anti-oxidants and soluble fibre

*shhh...they even used it in the roman times for an aphrodisiac!
