Pesto and Pine Nut Courgetti with Pan Fried Turkey Breast

So for those of you going gluten free or who just want a lighter alternative to pasta (and more tasty), you should try spiralising. From courgettes to sweet potato and butternut squash, there are a whole host of veggies you can spiralise into colourful spaghetti for salads or pasta style dishes.

If you are looking for a healthy but quick and easy meal, this one is super tasty and tried and tested on friends. Give it a go and feel full on protein and veggie goodness.

Ingredients

*Turkey Breast

*Paprika

*Salt & Pepper

*Olive Oil

*One whole courgette

*Pesto

*Pine Nuts

That's it honestly!

Method

Start by preparing your turkey breast. Lay out two sheets of baking paper, place the turkey breast on one sheet and season with a glugg of olive oil, paprika and salt and pepper. Place the other sheet on top and flatten with a rolling pin.

Next, using a spiraliser or a grater, make your courgette into courgetti! Peel away small sections if you are using a grater. In two frying pans, heat some oil. Placing your ingredients in separate pans, heat until cooked through. In another pan, dry roast your pine nuts. Once cooked through, add a teaspoon of pesto to your courgetti and plate up with a sprikling of pine nuts. Voila! :)
